In keeping with the theme of the day, Cinco de Mayo, I made Chicken and Beef Fajitas and of course a Margarita, the most important part of the celebration. I made the marinade for the chicken, beef and peppers from scratch, but used a shortcut for the guacamole, still very tasty.
